When you are choosing potatoes for a recipe, remember that waxy potatoes and baby new potatoes are excellent for salads; large Kerr's Pinks or Golden Wonders are good for baking and Maris Pipers are the potato of choice by chefs for the best mashed potatoes.

Cookery Schools

We're constantly finding new cooking schools and adding them to our All-Ireland cookery school listing. Here are a selection of the cooking classes and schools we have found so far in Ireland and Northern Ireland and a few that Irish people run across the world.

Just Cooking Cookery School

Mark & Bernie started their cookery school in Firies, Killarney to share their skills with would-be-cooks. Mark has worked for over 20 years in some of Europe's finest hotels and restaurants including The Ritz hotel, London, The Merrion hotel, Dublin, The Four Seasons hotel, London, The Portmarnock Hotel and Golf Links, Dublin and The Que en Elizabeth 2 cruise liner. He also spent two years working in Australia and worked in Lynches restaurant In Melbourne. Mark's last post, before starting Just Cooking, was as the opening chef at The Fifth Season restaurant in Killarney, Co. Kerry. He has also won many awards for his cooking, including the overall winner of the Moreau Chablis fish dish of the year award 2004. Bernie has over 20 years experience in catering management and training and has worked on the The Queen Elizabeth 2, Ajays in Melbourne, Australia, The City University business school in London amd Seasons Catering at The Guinness Store House in Dublin. Petra Carter Cookery School
Petra Carter runs cookery holidays from her B&B in the South of France - aimed at people with a busy lifestyle, who want to eat well at their own kitchen table but also entertain their friends without spending too much time slaving over a hot stove. The food is relaxed and casually elegant,  it can be planned ahead or totally spur of the moment and it is always in tune with the seasons.  Needless to say that wine-appreciation is of course very much part of each course!

The Donnybrook Fair cookery school is a partnership with established food expert, Monique McQuaid of Gastromonique. The team at Donnybrook Fair are "devoted to food" and see the launch of our new on site school as a natural progression to our core business of premium food retailing. The aim of the school is to focus on expanding our customers knowledge around food, the importance of sourcing fresh food locally, seasonality and nutrition and helping those who come to the classses to create delicious foods that is uncomplicated and at the same time fun!
 
 

Dublin Cookery School is a stunning state-of-the-art purpose-built premises in Blackrock. The school runs over 70 courses a year, including evening courses, Saturday courses, one week courses and the intensive one month certificate course which runs three times a year. Lynda Booth, owner of Dublin Cookery School, is a hugely experienced chef who has been teaching her craft for more than a decade. She originally trained and worked as a chef at “Ballymaloe House” for three years before working abroad in restaurants in Canada, Italy, and the UK - including working for Raymond Blanc in his Michelin two-starred restaurant “Le Manoir aux Quat’Saisons”in Oxford. Lynda also has strong affiliations with many of the best chefs at home and abroad, and draws on them regularly to teach at the school. These include celebrity and Michelin-star chefs such as Neven Maguire, Oliver Dunne and Atul Kochhar.

Tom Yam Cookery School

Hosted by Head Chef at the Tom Yam Restaurant  Charlie Phuakchoo who has more than 20 years experience in cooking Thai food. Originally from Suratthani in Southern Thailand, Charlie has worked with the prestigious Oriental Group and Blue Elephant Group. He has cooked in Dublin, Paris, Dubai, Belgium, Germany and Copenhagen perfecting his trade.

His impressive career has given him a notable clientele with President Mary McAleese, Sir Bob Geldof and Sir Roger Moore numbering amongst his many VIP diners. He came to Ireland to open the renowned Diep le Shaker Resaurant and went on to open the very successful Tiger Becs restaurant in Dublin, part of the successful La Stampa group.
