Picking Potatoes

When you are choosing potatoes for a recipe, remember that waxy potatoes and baby new potatoes are excellent for salads; large Kerr's Pinks or Golden Wonders are good for baking and Maris Pipers are the potato of choice by chefs for the best mashed potatoes.

Curried salmon steaks

Deceptively simple, all you do is brush curry sauce over the salmon steaks and fry them. You can use a good quality curry paste. Serve with rice, sliced banana and a cucumber raita and you have a healthy meal.

Serves 4

Ingredients

4 salmon steaks
1 or 2 tablespoons of good quality curry paste from a jar (depends on how thick the curry paste is)
Olive or vegetable oil
Squeeze of lemon

    

Directions

1. Mash the curry sauce with a fork. Add a little oil from the jar to loosen it.
2. Glaze each salmon steak on both sides with the curry paste.
3. Heat the oil in a non-stick pan, and fry the salmon steaks on all sides for a minute. Turn the heat down and cook for 4 minutes a side.
4. Serve with boiled rice, sliced banana and cucumber raita (see below).

Cook’s note
You can also put the salmon steaks into a baking tray and bake in the oven at 200ºC/400ºF/Gas Mark 5 for 8 minutes.

Cucumber Raita
Raita is a cooling Indian side-dish - this one is made from yogurt and cucumber.
You'll need:
1 large tub of natural yogurt
1 cucumber, peeled, chopped into small chunks and drained
Salt

1. Mix the cucumber with the yogurt, add a little salt to taste.
2. Chill in the fridge and take out just before serving.
