Classic Irish recipe of mashed potato and scallions or spring onions (you can use leeks instead).
1lb (about 2 cups) of mashed potato, they should be hot 3-4 tablespoons of Hot milk 3-4 tablespoons of melted butter 5 spring onions/scallions, sliced finely A few sprigs of parsley, chopped Salt and white pepper
1. Beat the hot milk with the hot mashed potato in a saucepan, add the spring onions and parsley, season to taste, then make a well in the centre and pour in the melted butter. Put a lid on the saucepan and put it over the lowest heat. Turn off the heat immediately and leave it for 30 seconds to let the potatoes steam and soften.
