Don’t add salt to the water when you are boiling potatoes – this stops them splitting. Instead drain them, and then season.

Soft creamy onions mixed with mashed potatoes are fabulous with lamb, belly pork or roast chicken. You can use chives instead of onions for Chive Mash.
450g potatoes, cooked and mashed with a generous dollop of butter and cream (keep hot) 2 onions, cooked in a little olive oil and butter with the lid on, for about 20-30 minutes until they are soft.
1. Mash the onions with a fork to soften them. Add to the hot potatoes, mashing well so the onions and potatoes melt into each other.Cook's note– You can add chives instead of the onions.
