Tip for boiling potatoes

Don’t add salt to the water when you are boiling potatoes – this stops them splitting. Instead drain them, and then season.

Stir-Fried Cabbage with bacon

Cabbage is a traditional food in Ireland – we eat it with boiled bacon. Here is a modern twist where you fry it with bacon for a meal-in-one or a side dish.

Serves 8


1 medium savoy cabbage, cored and finely shredded
2 rashers of good quality streaky bacon, finely diced
2 tbsps light olive oil
2 tbsps toasted sunflower seeds
White Pepper to season



1. In a large pan, fry the bacon in its own fat until golden and crisp.
2. Add the cabbage, oil, sunflower seeds and pepper. Fry for 3-4 mins until the cabbage is just tender. Serve straight away or the cabbage will go limp.
