Homely lamb stew
You can't beat Irish lamb, the depth of flavour, the soft texture. A lamb stew is such an easy thing to make - you can leave it overnight and it tastes even better the next day. Don't over-cook the potatoes in this recipe or you will end up with sludge when you reheat it.
